In the dry highlands of Huehuetenango lies Las Codornices, a remarkable farm run by Diana and Hector Ovalle. Where others saw water scarcity, they built a future for coffee: with irrigation systems, rainwater tanks, and deep expertise, the couple produces remarkably expressive coffees year after year. This Geisha is intensely fruity, with bright acidity, candy-like sweetness, and a soft, round body.
The coffee is naturally processed — a logical choice in a region where water is scarce. The cherries undergo controlled fermentation and are sun-dried slowly. Diana and Hector combine craftsmanship with innovation. Thanks to their openness and commitment, their microlots have become recurring highlights on many specialty coffee menus.
