If you use a fully automatic machine, keep in mind that these are usually calibrated for darker roasts, so the result may taste lighter or more acidic. If possible, adjust the grind to be finer and increase the dose.

And most of all, dare to play with grind, ratio, and time. Every bean asks for something different — and that is what makes it fun.

Between lectures and research at the university, I was looking for something tangible — something you can smell, touch, and taste. That’s how I started roasting coffee, and out of that curiosity Onsen was born. Something tangible alongside the world of theory and paper: coffee you can smell, touch, and taste. This is how Onsen came to be, a small roastery in Bunde.

I roast light to medium-light, so the bean’s original flavors are preserved. For each coffee, I look at its flavor profile and adjust my roast recipe accordingly. Everything is roasted in small batches, often only after an order comes in. On roasting days, the smell of freshly roasted coffee drifts through the streets of Bunde.

The name Onsen comes from my love for Japan. An onsen is a hot spring: a place of calm, simplicity, and repetition. For me, that feeling connects seamlessly with morning coffee and with the Zen philosophy that guides my work. People often say you can taste love in food. I hope that in my coffee, you can taste curiosity.

If you’re mostly used to supermarket beans, don’t be surprised: specialty coffee tastes lighter, fresher, and often fruitier. That’s not a mistake — that’s the bean itself.

For filter coffee I recommend 15 grams per 250 milliliters of water. For espresso, use 18 grams in and aim for 36 grams out in about 30 seconds.

For espresso and Aeropress, let the coffee rest a few days after the roast date, while filter can be used immediately.

Coffee is best stored in the bag, airtight and dark, but not in the fridge or freezer.
