This coffee is processed naturally: fully ripe coffee cherries are spread evenly on raised beds and turned every hour to prevent mold, especially in the first days. They are dried in the sun for at least 12 days.

Origin and Sustainability
This coffee comes from the Limmu Kossa Estate, located in the Jimma region of Ethiopia, the birthplace of coffee. The estate is located at altitudes ranging from 1,834 to 2,070 meters above sea level. The estate is managed by Giday Berhe Retta, known locally as Abba Ollie ("the one who exalts"). The estate is known for its organic farming methods, where coffee cherries ripen slowly under the shade of old trees. The estate has several microclimates, particularly in the Betella, Suki and Sinsino zones, which contribute to the complexity and floral characteristics of the coffee.
