Sustainability: This coffee is hand-harvested on a small farm in Bruselas, Huila. Only perfectly ripe cherries are selected. Thanks to controlled fermentation and drying, the coffee retains its unique aroma and contributes to local employment and mindful stewardship of natural resources.
In the hills of Bruselas, Huila, at nearly two thousand meters above sea level, lies Finca El Diviso. Here, Jonathan Alexis Delgado Zúñiga produces a distinctive coffee with citrus notes and a gentle sweetness. The flavor profile is fresh and vibrant, with a bright, juicy acidity and a rounded body.
The cherries are hand-picked at peak ripeness. After an oxidative stage, they undergo extended anaerobic fermentation, followed by a unique wash with hot water. This heat helps fix the aromatic compounds developed during fermentation. Controlled drying with dehumidifiers results in a clean, balanced cup with a subtle chamomile finish.
